Easy Caramel Popcorn

The directions call for finishing this easy popcorn snack by baking it to harden the syrup.  If you don't mind sticky popcorn, you can skip the baking step.  In any case, be sure to cool the popcorn before serving, as hot syrup can burn your mouth.  To me, a 1-cup serving size of this delish dish is criminally tiny, but it's so low in fat and calories that I don't feel guilt-stricke...

Maple Angel Food Cake

Light Pumpkin Cheesecake

This recipe is from eatbetteramerica.  I dial it down a notch by using Splenda brown sugar and Splenda sugar substitute.  I have no idea what that does to the nutrition value...other than decreasing the sugar/carb ratio.  Be sure to use canned pumpkin, not pumpkin pie filling, for this cheesecake.  Pumpkin pie filling contains other ingredients and will not work in this recipe....

Roasted Pumpkin Seeds
